Ingredients

- 6 cups chicken broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup water
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (9 ounce) package refrigerated cheese tortellini
- 1 cup fresh spinach, chopped
- 1/4 cup grated Parmesan cheese, for topping
Instructions
- Combine chicken broth, diced tomatoes, water, Italian seasoning, garlic powder, salt, and pepper in a large pot.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to medium-low, cover, and simmer for 10 minutes.
- Add the tortellini to the pot. Cook according to package directions, usually about 3 to 5 minutes, until the tortellini float.
- Stir in the chopped spinach until it wilts, about 1 minute.
- Ladle the soup into bowls and top each serving with Parmesan cheese.
Notes
- You can substitute vegetable broth for chicken broth for a vegetarian option.
- Add cooked, shredded chicken for extra protein.
