Description
A simple pasta dish featuring sausage, fresh spinach, and a tomato-based sauce.

- 1 pound pasta (penne or rotini recommended)
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
- Add chopped onion to the skillet with the sausage and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in crushed tomatoes. Add oregano, basil, and red pepper flakes if using. Bring the sauce to a simmer and cook for 10 minutes, stirring occasionally.
- Add spinach to the sauce in batches, stirring until it wilts completely.
- Add the drained pasta to the skillet with the sauce. Toss to coat. If the sauce seems too thick, add a few tablespoons of the reserved pasta water until you reach your desired consistency.
- Stir in Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately.
Notes
- Use sweet or hot Italian sausage based on your preference.
- For a creamier sauce, stir in 1/4 cup of heavy cream with the Parmesan cheese.
