Description
A simple pasta salad with Tex-Mex flavors.
Ingredients

- 12 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (canned or frozen)
- 1 red bell pepper, diced
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the rotini pasta according to package directions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, corn, red bell pepper, black beans, cheddar cheese, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt, and pepper to make the dressing.
- Pour the dressing over the pasta and vegetable mixture.
- Toss gently until all ingredients are evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- You can add diced avocado just before serving for extra creaminess.
- Adjust chili powder to control the spice level.
