Description

A simple pasta salad with Tex-Mex flavors.


Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (canned or frozen)
  • 1 red bell pepper, diced
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the rotini pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, corn, red bell pepper, black beans, cheddar cheese, and cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta and vegetable mixture.
  5. Toss gently until all ingredients are evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • You can add diced avocado just before serving for extra creaminess.
  • Adjust chili powder to control the spice level.
