A straightforward recipe for making a chicken quesadilla similar to fast-food versions.
Ingredients

- 2 large flour tortillas
- 1 cup cooked, shredded chicken
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup shredded cheddar cheese
- 1 tablespoon butter or oil
Instructions
- Heat a skillet over medium heat.
- Spread half the butter or oil in the skillet.
- Place one tortilla in the skillet.
- Sprinkle half the chicken and half the cheese mixture over the tortilla.
- Top with the second tortilla.
- Cook for 3 to 4 minutes until the bottom is golden brown.
- Carefully flip the quesadilla.
- Add the remaining butter or oil to the skillet around the edges.
- Cook for another 3 to 4 minutes until the second side is golden and the cheese is melted.
- Remove from the skillet and let it rest for one minute.
- Cut into wedges before serving.
Notes
- Use pre-cooked rotisserie chicken for faster preparation.
- You can substitute the chicken with cooked ground beef or beans.
- Serve with sour cream or salsa if desired.
