Description
Simple recipe for chocolate cupcakes with a light-colored swirl.

- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup buttermilk
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup hot water
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt for the chocolate batter.
- Add the eggs, buttermilk, vegetable oil, and 1 teaspoon of vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes.
- Carefully stir in the hot water by hand until just combined. The batter will be thin.
- In a small bowl, beat the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth for the swirl mixture.
- Fill each cupcake liner about one-third full with the chocolate batter.
- Drop small spoonfuls of the cream cheese mixture on top of the chocolate batter in each liner.
- Use a toothpick or small knife to gently swirl the cream cheese mixture into the chocolate batter. Do not over-mix.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can use regular milk instead of buttermilk if you add 1/2 teaspoon of white vinegar or lemon juice to the milk and let it sit for five minutes before using.
- For a stronger swirl, use slightly less chocolate batter in the liners.
