  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 cup steamed broccoli florets
  • 1/2 cup sliced red bell pepper
  • 2 green onions, sliced for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, ginger, and garlic.
  4. Pour the sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken completely.
