- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 cup steamed broccoli florets
- 1/2 cup sliced red bell pepper
- 2 green onions, sliced for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, ginger, and garlic.
- Pour the sauce mixture over the cooked chicken in the skillet. Stir to coat the chicken completely.
- Simmer for 2-3 minutes until the sauce thickens slightly.
- Divide the cooked rice among serving bowls.
- Top the rice with the sweet chili chicken, steamed broccoli, and sliced red bell pepper.
- Garnish with sliced green onions before serving.
Notes
- You can substitute brown rice for white rice.
- For extra heat, add a pinch of red pepper flakes to the sauce mixture.
- This recipe works well with chicken thighs instead of breasts.
