- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1/2 cup pineapple juice
- 1/4 cup ketchup
- 2 tablespoons white vinegar
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon vegetable oil
- 1/2 green bell pepper, cut into chunks
- 1/2 red bell pepper, cut into chunks
- 1/2 cup pineapple chunks
Instructions
- In a shallow dish, combine flour, salt, and pepper.
- Dip chicken pieces in beaten egg, then dredge in flour mixture.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In a small bowl, whisk together pineapple juice, ketchup, vinegar, brown sugar, and soy sauce.
- In a separate small bowl, mix cornstarch and water to create a slurry.
- Pour the sauce mixture into the skillet and bring to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
- Add bell pepper chunks and pineapple chunks to the skillet. Cook for 2-3 minutes until peppers are tender-crisp.
- Return the cooked chicken to the skillet and toss to coat with the sauce.
- Serve immediately.
Notes
- Serve with steamed rice for a complete meal.
- You can add other vegetables like onions or carrots.
