Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
- For the crust: Whisk together flour, baking powder, and salt in a small bowl.
- In a large bowl, beat the softened butter and 1 cup sugar until creamy. Beat in the egg and 1 teaspoon vanilla extract. Gradually add the flour mixture until just combined.
- Press two-thirds of the dough into the bottom of the prepared springform pan. Bake for 10 minutes. Remove from oven and let cool slightly.
- For the filling: Beat the 8 ounces cream cheese, 1/4 cup sugar, and 1/4 cup sour cream until smooth. Beat in 1 egg and 1 teaspoon vanilla extract until just blended. Pour this mixture over the cooled crust.
- For the topping: Mix the remaining 8 ounces cream cheese, 1/4 cup sugar, 1/4 cup sour cream, and 1/4 teaspoon vanilla extract until smooth. Beat in the remaining egg until just combined. Gently spoon this mixture over the cheesecake layer.
- Crumble the remaining one-third of the dough over the top of the cheesecake.
- Bake for 45 to 55 minutes, or until the center is mostly set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from the oven and cool completely on a wire rack. Refrigerate for at least 4 hours before serving.
Notes
- You can use store-bought sugar cookie dough for a quicker crust and topping.
- For a smoother cheesecake, bring all dairy ingredients to room temperature before mixing.
