Classic Stuffed Bell Peppers

Description

A straightforward recipe for stuffed bell peppers filled with seasoned ground meat and rice, baked until tender.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess fat.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Add the cooked rice, tomato sauce, salt, pepper, oregano, and basil to the skillet. Stir to combine.
  6. Spoon the meat mixture evenly into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish. Add about 1/2 inch of water to the bottom of the dish.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove the foil and, if using, sprinkle the cheese over the peppers.
  10. Bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • You can substitute ground turkey or chicken for ground beef.
  • For a vegetarian option, use cooked lentils or a plant-based ground substitute instead of meat.
  • Add a pinch of red pepper flakes for a little heat.
