Ingredients

- 4 ears of corn, husked
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup crumbled cotija cheese
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn, turning occasionally, until lightly charred, about 8-10 minutes.
- Let the corn cool slightly, then cut the kernels off the cob.
- In a medium bowl, combine the corn kernels, mayonnaise, cilantro, lime juice, chili powder, salt, and pepper.
- Mix well to combine.
- Stir in the cotija cheese.
- Serve immediately or chill for later.
Notes
- For a spicier kick, add a pinch of cayenne pepper.
- If you don’t have cotija cheese, feta cheese can be substituted.
