Description

A simple and flavorful street corn salad recipe.


Ingredients

  • 4 ears of corn, husked
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup crumbled cotija cheese

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn, turning occasionally, until lightly charred, about 8-10 minutes.
  3. Let the corn cool slightly, then cut the kernels off the cob.
  4. In a medium bowl, combine the corn kernels, mayonnaise, cilantro, lime juice, chili powder, salt, and pepper.
  5. Mix well to combine.
  6. Stir in the cotija cheese.
  7. Serve immediately or chill for later.

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
  • If you don’t have cotija cheese, feta cheese can be substituted.
