Description

Light pastry puffs filled with fresh whipped cream and sliced strawberries.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a medium saucepan, bring the water and butter to a boil over medium heat.
  3. Remove the pan from the heat and add the flour all at once. Stir vigorously until the mixture forms a smooth ball.
  4. Return the pan to low heat and cook, stirring constantly, for 1 minute.
  5. Transfer the dough to a mixing bowl. Beat in the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 15 minutes at 400°F (200°C). Reduce the oven temperature to 350°F (175°C) and bake for an additional 15-20 minutes, or until the puffs are golden brown and firm. Do not open the oven door during baking.
  8. Turn off the oven, prop the door open slightly, and let the puffs dry out in the oven for 15 minutes. Remove and cool completely on a wire rack.
  9. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Slice the cooled puffs in half horizontally. Fill the bottom half with whipped cream and top with sliced strawberries before placing the top half back on.

Notes

  • For best results, do not open the oven door while the puffs are baking.
  • You can prepare the cream filling just before serving to keep the puffs crisp.
