A simple recipe for chicken salad featuring fresh strawberries.
Ingredients

- 2 cups cooked, shredded chicken
- 1 cup fresh strawberries, sliced
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
- Lettuce leaves for serving
Instructions
- Place the shredded chicken in a medium bowl.
- Add the sliced strawberries, chopped celery, and chopped red onion to the bowl.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard.
- Pour the dressing over the chicken and vegetable mixture.
- Gently mix all ingredients until well combined.
- Season with salt and pepper to your preference.
- Serve the salad on lettuce leaves.
Notes
- You can substitute plain yogurt for half of the mayonnaise for a lighter dressing.
- For added crunch, include 1/4 cup of chopped pecans or walnuts.
