Description

A recipe for making pumpkin scones similar to those sold at Starbucks.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/4 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. Cut the cold butter into the flour mixture using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the pumpkin puree, heavy cream, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a fork until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 3/4-inch thick circle.
  7. Cut the circle into 8 equal wedges, like a pizza. Place the wedges on the prepared baking sheet, spacing them about 1 inch apart.
  8. Bake for 14 to 17 minutes, or until the edges are lightly golden brown. Let the scones cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the scones cool, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle the glaze over the cooled scones. Let the glaze set before serving.

Notes

  • For a richer flavor, you can substitute buttermilk for the heavy cream in the dough.
  • You can add 1/2 cup of chopped pecans or walnuts to the dough mixture if desired.
  • If the dough is too sticky to handle, chill it in the refrigerator for 15 minutes before cutting.
