Spaghetti Aglio e Olio

Description

A simple and classic Italian pasta dish featuring garlic, olive oil, and red pepper flakes.


Ingredients

  • 1 pound spaghetti
  • 1/2 cup extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1/4 teaspoon red pepper flakes (or more, to taste)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook spaghetti in a large pot of salted boiling water according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium-low heat. Add the sliced garlic and cook, stirring occasionally, until golden brown and fragrant, about 3-5 minutes. Be careful not to burn the garlic.
  3. Add the red pepper flakes to the skillet and cook for another 30 seconds until fragrant.
  4. Add the drained spaghetti to the skillet with the garlic and oil. Toss well to coat the pasta.
  5. Add about 1/2 cup of the reserved pasta water to the skillet and toss continuously until a light sauce forms and coats the spaghetti. Add more pasta water, a tablespoon at a time, if needed to reach your desired consistency.
  6. Season with salt and freshly ground black pepper to taste.
  7. Stir in the chopped fresh parsley.
  8. Serve immediately, with grated Parmesan cheese on the side if desired.

Notes

  • For a richer flavor, you can add a splash of white wine to the skillet after cooking the garlic and before adding the pasta.
  • Adjust the amount of red pepper flakes to your preference for spice.
