Slow Cooker Honey Garlic Chicken

Description

Simple recipe for tender chicken cooked in a sweet and savory honey garlic sauce using a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup water
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Place chicken in the slow cooker.
  2. In a separate bowl, whisk together soy sauce, honey, 1/4 cup water, apple cider vinegar, minced garlic, ginger, and pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is cooked through.
  5. Remove the chicken and shred it using two forks, if desired, or leave it whole.
  6. In a small bowl, mix the cornstarch and 2 tablespoons of cold water to create a slurry.
  7. Stir the slurry into the sauce remaining in the slow cooker.
  8. Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
  9. Return the chicken to the slow cooker and toss to coat with the thickened sauce.
  10. Serve hot.

  • Serve this chicken over rice or with steamed vegetables.
  • For a thicker sauce, increase the cornstarch slightly, adding it in small increments.
