Description

A basic recipe for homemade tomato soup.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in crushed tomatoes and vegetable broth. Stir in basil, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove the pot from the heat. Use an immersion blender to blend the soup until smooth, or carefully transfer in batches to a regular blender.
  7. Return soup to the pot. Stir in heavy cream, if using. Heat through gently without boiling.
  8. Serve hot.

Notes

  • For a richer flavor, roast the tomatoes before using them.
  • Serve with grilled cheese sandwiches for a classic meal.
