A straightforward recipe for a hearty and nutritious red lentil soup.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the garlic, cumin, and turmeric. Cook for 1 minute until fragrant.
  4. Add the rinsed lentils, vegetable broth, pepper, and salt.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 to 25 minutes, or until the lentils are tender.
  6. Use an immersion blender to partially blend the soup for a thicker texture, or blend completely if you prefer a smooth soup.
  7. Stir in the lemon juice before serving.

Notes

  • For a richer flavor, substitute half the vegetable broth with chicken broth.
  • If the soup becomes too thick during simmering, add a little more broth or water.
  • Garnish with fresh parsley if desired.
