Description

A straightforward recipe for moist pumpkin bars with a cream cheese frosting.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, and eggs. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  5. Pour the batter into the prepared pan. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely on a wire rack.
  6. To make the frosting, beat the softened cream cheese, butter, and vanilla extract together until smooth.
  7. Gradually add the powdered sugar and beat until the frosting is light and fluffy.
  8. Spread the frosting evenly over the cooled pumpkin bars. Cut into squares before serving.

Notes

  • Use canned pumpkin puree, not pumpkin pie filling.
  • Make sure the bars are completely cool before frosting them.
