A simple, one-pan meal combining savory sausage with sweet potatoes and onions.
Ingredients

- 1 lb smoked sausage, sliced
- 2 large sweet potatoes, peeled and diced
- 1 large yellow onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the diced sweet potatoes and chopped onion to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until potatoes begin to soften.
- Add the sliced sausage to the skillet. Continue cooking for another 5 to 7 minutes until the sausage is browned.
- Stir in the smoked paprika and dried thyme. Season with salt and pepper.
- Cook for 2 more minutes until spices are fragrant.
- Serve immediately.
Notes
- You can substitute chicken or turkey sausage for pork sausage.
- For crispier potatoes, cook them for a few extra minutes before adding the sausage.
