Simple recipe for roasting zucchini with Parmesan cheese.
Ingredients

- 2 medium zucchini
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Wash and trim the ends of the zucchini.
- Slice the zucchini into 1/4-inch thick rounds.
- Place the zucchini slices on a baking sheet.
- Drizzle the zucchini with olive oil and toss to coat evenly.
- Sprinkle the salt and pepper over the zucchini.
- Roast for 15 minutes.
- Remove the baking sheet from the oven and sprinkle the Parmesan cheese over the zucchini.
- Return to the oven and roast for another 5 to 7 minutes, or until the cheese is melted and lightly browned.
- Serve immediately.
Notes
- You can add a pinch of garlic powder with the salt and pepper for extra flavor.
- Do not overcrowd the baking sheet; use two sheets if necessary for even roasting.
