Ingredients

  • 1 pound pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup Italian dressing
  • 1/4 cup mayonnaise
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together the Italian dressing and mayonnaise until smooth.
  4. Pour the dressing mixture over the pasta and vegetables. Toss gently to coat everything evenly.
  5. Season with salt and pepper as needed.
  6. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.
