Rich chocolate brownies topped with pistachio cream and crushed Ferrero Rocher candies.

- 1 cup (225g) unsalted butter
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (75g) unsweetened cocoa powder
- 1/2 cup (60g) all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup (85g) chopped pistachios (for batter)
- 1/2 cup (120ml) heavy cream
- 1 cup (170g) white chocolate chips
- 1/2 cup pistachio butter
- 1 teaspoon almond extract
- 1 cup (150g) Ferrero Rocher chocolates, roughly chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang.
- Melt the butter in a saucepan over low heat. Remove from heat and whisk in the granulated sugar and brown sugar until combined.
- Whisk in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the cocoa powder, flour, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chopped pistachios for the batter. Pour the batter into the prepared pan and spread evenly.
- Bake for 25 to 30 minutes. Let the brownies cool completely in the pan.
- While the brownies cool, prepare the topping. Heat the heavy cream in a small saucepan until it just simmers. Remove from heat.
- Place the white chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate chips and let stand for 5 minutes. Whisk until smooth.
- Whisk the pistachio butter and almond extract into the melted white chocolate mixture until smooth.
- Pour the pistachio topping evenly over the cooled brownies.
- Sprinkle the chopped Ferrero Rocher chocolates over the top layer.
- Chill the brownies in the refrigerator for at least 2 hours before cutting into squares.
Notes
- For a fudgier texture, bake closer to 25 minutes.
- Use high-quality cocoa powder for the best chocolate flavor.
- You can toast the pistachios before adding them to the batter for deeper flavor.
