A light and refreshing salad featuring pineapple and cucumber.
Ingredients

- 2 cups fresh pineapple chunks
- 2 large cucumbers, peeled and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- Combine pineapple, cucumber, red onion, and cilantro in a large bowl.
- In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients.
- Toss gently to coat everything evenly.
- Chill for at least 15 minutes before serving.
Notes
- For a crunchier texture, add 1/4 cup of toasted pecans.
- You can substitute lemon juice for lime juice if needed.
