- 2 cups all-purpose flour
- 1.5 cups granulated sugar
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup buttermilk
- 0.5 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (20 ounce) can crushed pineapple, undrained
- 8 ounces cream cheese, softened
- 0.5 cup unsalted butter, softened
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- In a separate bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Stir in the undrained crushed pineapple.
- Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and softened butter until smooth.
- Add the powdered sugar and lemon juice, and beat until the frosting is light and fluffy.
- Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.
Notes
- For a richer flavor, you can add a tablespoon of rum extract to the cake batter.
- Ensure your cream cheese and butter are at room temperature for the smoothest frosting.
