Description

A simple and quick pasta dish featuring fresh pesto and sweet cherry tomatoes.


Ingredients

  • 1 pound pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add cherry tomatoes and cook until softened, about 5 minutes.
  3. Add cooked pasta, pesto, and reserved pasta water to the skillet. Toss to combine.
  4. Stir in Parmesan cheese. Season with salt and pepper.
  5. Serve immediately.

Notes

  • For a richer flavor, add a splash of heavy cream.
  • You can add grilled chicken or shrimp for added protein.
