One Pot Taco Pasta

Description

A quick and easy one-pot pasta dish with taco flavors.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 4 cups beef broth
  • 12 ounces pasta (such as rotini or penne)
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the taco seasoning, diced tomatoes, kidney beans, and beef broth. Bring the mixture to a boil.
  4. Add the pasta to the pot, stir, and reduce heat to medium-low. Cover and simmer for 15-20 minutes, or until the pasta is cooked through and most of the liquid has been absorbed, stirring occasionally.
  5. Remove from heat and stir in the shredded cheddar cheese until melted.
  6. Serve hot.

Notes

  • For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • You can substitute ground turkey or chicken for the ground beef.
