Simple, no-bake energy balls flavored like pecan pie.
Ingredients

- 1 cup raw pecans
- 1/2 cup pitted Medjool dates
- 1/4 cup rolled oats
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 2 tablespoons finely chopped pecans for rolling (optional)
Instructions
- Place the pecans, dates, rolled oats, maple syrup, vanilla extract, cinnamon, and salt into a food processor.
- Process the mixture until it forms a sticky dough that holds together when pressed. You may need to stop and scrape down the sides a few times.
- If using, spread the finely chopped pecans on a small plate.
- Roll the dough into small, bite-sized balls, about 1 inch in diameter.
- Roll each ball in the chopped pecans, if desired.
- Place the finished balls on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to one week.
- For a richer flavor, lightly toast the pecans before processing.
