Ingredients

  • 1 cup fresh morel mushrooms, cleaned and halved
  • 2 tablespoons unsalted butter
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 1/4 cup dry white wine
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Clean the morel mushrooms thoroughly. Cut larger mushrooms in half lengthwise.
  2. Melt the butter in a skillet over medium heat.
  3. Add the minced shallot and cook until softened, about 2 minutes.
  4. Add the morel mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and begin to brown, about 5 to 7 minutes.
  5. Add the minced garlic and cook for 1 minute until fragrant.
  6. Pour in the white wine and let it reduce by half, scraping up any browned bits from the bottom of the pan.
  7. Stir in the fresh parsley. Season with salt and pepper to your taste.
  8. Serve immediately.

Notes

  • If you cannot find fresh morels, use dried morels soaked in warm water for 30 minutes; reserve the soaking liquid for extra flavor.
  • Use fresh thyme or chives instead of parsley for a different flavor profile.
