Description
A classic French side dish featuring sliced potatoes sautéed with onions.

- 2 lbs potatoes, peeled and thinly sliced
- 2 tablespoons butter
- 2 tablespoons oil
- 2 medium onions, thinly sliced
- 1/4 cup chopped fresh parsley
- Salt to taste
- Black pepper to taste
Instructions
- Rinse the sliced potatoes under cold water and pat them dry thoroughly.
- Heat the butter and oil in a large skillet over medium heat.
- Add the sliced onions to the skillet and cook until softened and lightly browned, about 8 to 10 minutes. Remove the onions and set them aside.
- Add the dried potatoes to the same skillet in a single layer if possible. Cook for about 10 to 15 minutes, turning occasionally, until the potatoes are golden brown and tender.
- Return the cooked onions to the skillet with the potatoes. Season with salt and pepper.
- Stir gently to combine and heat through for 1 minute.
- Stir in the fresh parsley just before serving.
Notes
- Use starchy potatoes like Russets for the best texture.
- Do not overcrowd the pan when cooking the potatoes; cook in batches if necessary.
