Description
A simple casserole combining baked potato flavor with cheese, bacon, and sour cream.
Ingredients

- 6 medium russet potatoes, baked and cooled
- 1 cup sour cream
- 1/2 cup milk
- 4 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese, divided
- 1 cup cooked bacon bits
- 1/2 cup chopped green onions
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
- Scoop the flesh from the baked potatoes into a large bowl. Leave the skins out.
- Add the sour cream, milk, melted butter, salt, and pepper to the potatoes. Mix until just combined. Do not overmix.
- Stir in 1 1/2 cups of the cheddar cheese, bacon bits, and green onions into the potato mixture.
- Spread the mixture evenly into the prepared baking dish.
- Top the casserole with the remaining 1/2 cup of cheddar cheese.
- Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
- Let the casserole rest for 5 minutes before serving.
Notes
- You can use pre-shredded cheese, but block cheese shredded at home melts better.
- For extra flavor, add 1/4 cup of dry minced onion to the potato mixture.
