Description
A hearty pasta dish that combines the flavors of a bacon cheeseburger.

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 (8 ounce) can tomato sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 pound pasta, cooked and drained
- 8 slices bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, chopped green onions
Instructions
- In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced tomatoes, Rotel, tomato sauce, chili powder, cumin, salt, and pepper. Bring to a simmer.
- Reduce heat and let simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened.
- Add the cooked pasta to the skillet and stir to combine with the sauce.
- Stir in 1 cup of the shredded cheddar cheese until melted.
- Top with the remaining 1 cup of cheddar cheese and the crumbled bacon.
- Serve immediately, with optional toppings if desired.
Notes
- For a spicier dish, use a can of hot Rotel.
- You can substitute ground turkey for ground beef.
