Description
A simple recipe for chicken cooked with rice, seasoned with lemon and herbs.

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the skillet and cook until soft, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in rice, chicken broth, lemon juice, oregano, thyme, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low, cover the skillet, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender.
- Return the cooked chicken to the skillet. Stir gently to combine.
- Cook for 2-3 minutes more until the chicken is heated through.
- Stir in fresh parsley before serving.
Notes
- You can substitute brown rice, but adjust the cooking time as needed.
- Use chicken thighs instead of breasts for a richer flavor.
