Description
A quick and flavorful pasta dish featuring salmon, lemon, and fresh dill.
Ingredients

- 12 ounces pasta
- 1 tablespoon olive oil
- 1 pound salmon fillet, skin removed, cut into 1-inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1/4 cup dry white wine or chicken broth
- 1/4 cup heavy cream
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Zest of 1 lemon
Instructions
- Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Season salmon pieces with salt and pepper. Add salmon to the skillet and cook for 2-3 minutes per side, until cooked through. Remove salmon from skillet and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in white wine or broth and scrape up any browned bits from the bottom of the skillet. Let simmer for 1 minute.
- Stir in heavy cream, chopped dill, lemon juice, and lemon zest. Bring to a gentle simmer.
- Add cooked pasta and reserved salmon to the skillet. Toss to combine, adding a little reserved pasta water if needed to create a sauce.
- Serve immediately.
Notes
- For a lighter sauce, use half-and-half instead of heavy cream.
- Add a handful of spinach or peas for extra vegetables.
