Ingredients

  • 12 oz pasta (spaghetti or linguine)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/4 cup reserved pasta water
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook pasta according to package directions. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the pasta.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Remove the skillet from the heat. Stir in the lemon juice and lemon zest.
  5. Add the drained pasta to the skillet. Toss to coat.
  6. Add the reserved pasta water, a little at a time, tossing continuously until a light sauce forms that coats the pasta.
  7. Stir in the Parmesan cheese. Season with salt and pepper to your taste.
  8. Toss in the chopped parsley before serving.
