Crockpot Lasagna Soup

Description

A simple recipe for lasagna soup cooked in a slow cooker.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 lasagna noodles, broken into pieces
  • 1 cup water
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Brown the ground meat in a skillet. Drain off any fat.
  2. Transfer the browned meat, chopped onion, and minced garlic to the slow cooker.
  3. Add the crushed tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper to the slow cooker. Stir to combine.
  4. Cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles and water.
  6. Continue cooking until the noodles are tender, about 30 minutes.
  7. Stir in the ricotta cheese until mostly melted in.
  8. Ladle the soup into bowls. Top each serving with Parmesan cheese and mozzarella cheese.

Notes

  • You can substitute ground turkey for beef.
  • For a thicker soup, let it sit uncovered for 15 minutes after cooking.
