- 1/2 cup almond flour
- 1/4 cup lemon juice, fresh
- 1/4 cup erythritol or preferred keto sweetener
- 2 tablespoons coconut oil, melted
- 1 teaspoon lemon zest
- Pinch of salt
Instructions
- Combine shredded coconut, almond flour, sweetener, and salt in a medium bowl.
- Add melted coconut oil, lemon juice, and lemon zest to the dry ingredients.
- Mix well until a thick dough forms. If the mixture is too dry, add a few drops more lemon juice.
- Roll the mixture into small, bite-sized balls (about 1 inch in diameter).
- Place the balls on a plate lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- For a different flavor, substitute lime juice and zest for lemon.
- You can roll the finished balls in extra shredded coconut for coating.
