Description

A simple, cold pasta salad featuring cheese tortellini, vegetables, and Italian dressing.


Ingredients

  • 1 (16 ounce) package cheese tortellini
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Italian dressing
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the tortellini according to package directions. Drain well and rinse with cold water to cool completely.
  2. In a large bowl, combine the cooled tortellini, tomatoes, cucumber, olives, and red onion.
  3. Pour the Italian dressing over the pasta and vegetable mixture. Toss gently to coat everything evenly.
  4. Stir in the grated Parmesan cheese.
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.
