- 6 cups chicken broth
- 2 cups cooked, shredded chicken
- 1 cup small pasta (like pastina or orzo)
- 1 carrot, diced
- 1 celery stalk, diced
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot, and celery. Cook until softened, about 5 minutes.
- Add garlic and oregano. Cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add pasta and cook according to package directions, usually 7-10 minutes.
- Stir in shredded chicken and heat through.
- Season with salt and pepper.
- Serve hot, topped with Parmesan cheese.

- For extra flavor, use homemade chicken broth.
- You can add a squeeze of fresh lemon juice before serving for brightness.
