A simple and flavorful Italian chicken pasta dish.
Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 8 oz pasta, cooked according to package directions
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can diced tomatoes, undrained
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
- Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10 minutes.
- Stir in cooked pasta and Parmesan cheese.
- Serve hot.
Notes
- For a creamier sauce, stir in 1/4 cup heavy cream with the pasta.
- Add your favorite vegetables like bell peppers or spinach.
