Description

A simple and flavorful Italian chicken pasta dish.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 8 oz pasta, cooked according to package directions
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  6. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 10 minutes.
  7. Stir in cooked pasta and Parmesan cheese.
  8. Serve hot.

Notes

  • For a creamier sauce, stir in 1/4 cup heavy cream with the pasta.
  • Add your favorite vegetables like bell peppers or spinach.
