- 2 cups granulated sugar
- 1 teaspoon baking soda

- 3 large eggs
- 1 cup vegetable oil

- 1 cup mashed ripe bananas (about 2–3 medium)
- 8 ounces crushed pineapple, undrained
- 1 cup chopped pecans
- For the Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup (1 stick) unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
- In a separate bowl, beat the eggs, then whisk in the vegetable oil and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the mashed bananas, crushed pineapple, and chopped pecans.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the frosting: In a medium bowl, beat the cream cheese and butter until smooth.
- Beat in the vanilla extract. Gradually add the powdered sugar, mixing until well combined and creamy.
- Once the cake is completely cool, frost the top with the cream cheese frosting.

- You can toast the pecans before adding them to the batter for an extra layer of flavor.
