Description

A simple recipe for chicken pasta coated in a sweet and spicy honey pepper sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb pasta (penne or rotini recommended)
  • 2 tablespoons olive oil
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon black pepper, freshly ground
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 cloves garlic, minced
  • 1/4 cup water or chicken broth
  • Salt to taste

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, season the chicken pieces lightly with salt.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. In the same skillet, combine honey, soy sauce, apple cider vinegar, black pepper, red pepper flakes, and minced garlic. Bring the mixture to a simmer over medium heat, stirring constantly until slightly thickened, about 2 minutes.
  5. Stir in the water or broth to thin the sauce slightly.
  6. Return the cooked chicken to the skillet. Toss to coat the chicken evenly with the sauce.
  7. Add the drained pasta to the skillet. Toss everything together until the pasta is well coated. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
  8. Serve immediately.

Notes

  • For a richer flavor, use low-sodium soy sauce.
  • You can add steamed broccoli or sliced bell peppers with the chicken for extra vegetables.
