Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a small bowl, whisk together the Dijon mustard, honey, olive oil, salt, and pepper until combined.
- Place the cut potatoes in a large bowl.
- Pour the honey mustard mixture over the potatoes and toss until every piece is evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30 to 35 minutes, turning them halfway through, until they are golden brown and tender.
Notes
- For crispier potatoes, use Yukon Gold or red potatoes.
- You can add a pinch of garlic powder to the glaze for extra flavor.
