Description

A quick and simple skillet meal featuring ground turkey and fresh zucchini.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft, about 3 minutes.
  3. Add ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain any excess fat.
  4. Stir in garlic, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  5. Add chopped zucchini and chicken broth to the skillet.
  6. Bring the mixture to a simmer, then cover and cook for 5 to 7 minutes, or until the zucchini is tender-crisp.
  7. Remove from heat and serve immediately.

Notes
