Description
A simple, creamy, and spicy pasta dish inspired by Gigi Hadid’s popular recipe.
Ingredients
Scale
- 1/2 cup heavy cream
- 1/4 cup tomato paste
- 1/4 cup vodka
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 small shallot, minced
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- 8 ounces pasta (penne or rigatoni recommended)
Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced shallot and cook until soft, about 3 minutes.
- Add tomato paste and red pepper flakes to the skillet. Cook for 2 minutes, stirring constantly.
- Carefully pour in the vodka. Let it simmer for 2-3 minutes, allowing the alcohol to cook off slightly.
- Reduce heat to low. Stir in the heavy cream until the sauce is smooth.
- Add the grated Parmesan cheese and stir until melted into the sauce. Season with salt and pepper.
- Add the drained pasta to the skillet. Toss to coat. If the sauce is too thick, add reserved pasta water, one tablespoon at a time, until the sauce reaches your desired consistency.
- Serve immediately.
Notes
- You can substitute the vodka with chicken or vegetable broth if you prefer not to use alcohol.
- Use high-quality Parmesan cheese for the best flavor.
- Adjust the amount of red pepper flakes based on your spice preference.
