- 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon dried parsley
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Set up three shallow dishes. In the first, mix flour, salt, and pepper. In the second, place the beaten egg. In the third, combine panko breadcrumbs, Parmesan cheese, garlic powder, and parsley.
- Dredge each chicken piece first in the flour mixture, shaking off excess. Dip it into the egg, letting excess drip off. Finally, coat the chicken thoroughly in the breadcrumb mixture.
- Place the coated chicken pieces on the prepared baking sheet. Drizzle with olive oil.
- Bake for 18 to 20 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
- While the chicken bakes, prepare the sauce. In a small bowl, mix the melted butter and minced garlic.
- Once the chicken is cooked, transfer the bites to a clean bowl. Pour the butter-garlic mixture over the chicken and toss gently to coat evenly.
- Serve immediately.
Notes
- For extra crispiness, you can spray the coated chicken lightly with cooking spray before baking.
- Use fresh garlic for the best flavor in the sauce.
