- 2 cups grated zucchini, squeezed dry
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup grated Parmesan cheese
- 2 green onions, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for frying
Instructions
- In a medium bowl, combine the grated zucchini, flour, beaten eggs, Parmesan cheese, green onions, salt, and pepper. Mix well until all ingredients are incorporated.
- Heat the olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
- Cook for 3-4 minutes per side, until golden brown and cooked through.
- Remove fritters from the skillet and drain on paper towels.
- Serve warm.
Notes
- For crispier fritters, ensure you squeeze as much moisture as possible from the grated zucchini.
- You can add other herbs like parsley or dill to the mixture.
- Serve with sour cream or a yogurt-based sauce.
