Description

A simple recipe for homemade pita bread that is soft and fluffy.


Ingredients

Scale
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water (105-115°F)
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, dissolve yeast and sugar in warm water. Let stand for 5-10 minutes until foamy.
  2. In a large bowl, combine flour and salt.
  3. Add the yeast mixture and olive oil to the flour mixture. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and divide it into 6-8 equal portions.
  7. Shape each portion into a ball. Cover and let rest for 10 minutes.
  8. On a lightly floured surface, roll each ball into a thin circle (about 6-8 inches in diameter).
  9. Heat a cast-iron skillet or griddle over medium-high heat.
  10. Cook each pita for 1-2 minutes per side, until puffed up and lightly browned.
  11. Remove from skillet and cover with a clean kitchen towel to keep them soft.

Notes

  • For best results, use a kitchen scale to measure your flour.
  • If your kitchen is cool, you can place the dough in a slightly warm oven (turned off) to rise.
