A quick and refreshing salad made with fresh cucumbers and a light dressing.
Ingredients

- 2 large cucumbers
- 1/4 cup white vinegar
- 1/4 cup water
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Peel and thinly slice the cucumbers.
- In a medium bowl, whisk together the vinegar, water, sugar, salt, and pepper until the sugar dissolves.
- Add the sliced cucumbers to the dressing mixture.
- Toss gently to coat all the cucumber slices.
- Cover the bowl and refrigerate for at least 1 hour before serving.
Notes
- For extra flavor, add thinly sliced red onion to the salad.
- Drain off excess liquid before serving if the salad becomes too watery.
