Description
A straightforward recipe for tender pot roast cooked slowly in a slow cooker.
Ingredients

- 3 lb beef chuck roast
- 1 large onion, quartered
- 4 carrots, cut into large chunks
- 4 celery stalks, cut into large chunks
- 1 cup beef broth
- 1 packet dry onion soup mix
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Season the beef roast generously with salt and pepper.
- Place the onion, carrots, and celery in the bottom of the slow cooker.
- Place the seasoned roast on top of the vegetables.
- In a separate bowl, mix the beef broth, dry onion soup mix, Worcestershire sauce, and thyme.
- Pour the liquid mixture over the roast and vegetables.
- Cover and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the meat is very tender.
- Remove the roast and vegetables. Shred the meat with two forks before serving.
Notes
- For thicker gravy, remove the liquid and simmer it on the stovetop with a cornstarch slurry (2 tablespoons cornstarch mixed with 1/4 cup cold water) until thickened.
- You can add 1 lb of small red potatoes along with the other vegetables for a complete meal.
