Simple recipe for tender chicken cooked in a sweet and savory honey garlic sauce using a slow cooker.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 tablespoons minced garlic
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
- Place chicken in the slow cooker.
- In a medium bowl, whisk together soy sauce, honey, ketchup, garlic, ginger, and pepper.
- Pour the sauce mixture over the chicken.
- Cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is cooked through.
- Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker.
- In a small bowl, mix the cornstarch and cold water to create a slurry.
- Stir the slurry into the sauce in the slow cooker.
- Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
- Serve the chicken and sauce over rice or with vegetables.
Notes
- If you prefer thicker pieces of chicken, cook them whole and slice them before serving instead of shredding.
- For a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
