Description

Simple recipe for tender chicken cooked in a sweet and savory honey garlic sauce using a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup ketchup
  • 2 tablespoons minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

  1. Place chicken in the slow cooker.
  2. In a medium bowl, whisk together soy sauce, honey, ketchup, garlic, ginger, and pepper.
  3. Pour the sauce mixture over the chicken.
  4. Cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is cooked through.
  5. Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, mix the cornstarch and cold water to create a slurry.
  7. Stir the slurry into the sauce in the slow cooker.
  8. Cook on high for 10 to 15 minutes, stirring occasionally, until the sauce thickens.
  9. Serve the chicken and sauce over rice or with vegetables.

Notes

  • If you prefer thicker pieces of chicken, cook them whole and slice them before serving instead of shredding.
  • For a spicier flavor, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
